The house
Copper pans, low light, no hurry.
The room runs on cast iron, candle smoke, and a cellar with opinions. Whole ribs of Georgia beef hang forty-two days in the salt room; the fire is white oak, split out back; the last pour is whenever you say it is. Dinner here is not before the evening — it is the evening.

Six steps down, eleven degrees cooler. Burgundy you’ve heard rumors about, Rioja older than the staff, and a sommelier who would rather find your bottle than sell you one.
